We're having Salsa Chicken this week...sounds similar to the Crock pot Santa Fe chicken. It's just chicken, corn, black beans, and a jar of salsa...shred the chicken when it's close to done (except I usually use chicken I've shredded off the bones after making broth, so there's even less work for me then), and then add in a block of cream cheese during the last hour. We serve it over rice. Maybe we'll have to try the Santa Fe chicken sometime to compare the two! :)
That Chicken pot pie soup looks really good, too! AND I love they give directions to make it gluten-free! :) I saw they have a g-f label...I'm definitely checking that website out more. Thanks for posting the link!
